Banana Fritters

My missus makes scrambled banana for the kids. Egg yolk and a banana, the rest is the same as making scrambled eggs. Needs a low heat and constant stirring to not burn though, may not be such a problem if you don't have kids wrecking the place while trying to cook.

You've all got it wrong

"Bananas are for the blender"

Plus any or all of the following

Ananas

Mangos

Limes

Pompalamus

Papaya

 

But non optional the following

Ice

Ron

With allergic children I make gluten-free fritters - 3/4 cup of rice flour, 3/4 cup of corn flour, 1/2 cup of tapioca flour, a teaspoon of baking powder, 2 eggs, a cup (or is it two) of milk.  Mash two bananas with a fork and add to the mix. Fry in lots of oil at a medium heat until crispy golden brown.  Pour rum over the lot once finished (the kids aren't allergic to rum apparently)  

 

Hmmm, the younger child does rather like rum. Hmmm. Am I a bad parent? :-D

1. Magic Mango Madness

 

3 Mangoes  

coconut milk (400 g tin)

1/2 can sweetened condensed milk

pinch of nutmeg 

 

blend all ingredients until fluffy..

put in freezer until slushy ....blend again..

Repeat until thickish and ice crysticals have disappeared. 

Freeze until solid..

Makes aprox 1 litre

 

2. Gone Nutty and Banananas

 

6 Bananas 

2 to 3 tablespoons of peanut butter.

A tablespoon of maple syrup

(macadamias or pecan nuts optional)

 

blend all ingredients until fluffy..

put in freezer until slushy ....blend again..

Repeat until thickish and ice crysticals have disappeared. Stir in optional nuts.

Freeze until solid..

Makes aprox 1 litre

 

3. Double-Choc, Choc, Choc-chip

 

 

One Large block of milk or dark chocolate.

2 tablespoons of cocoa powder (or drinking chocolate)

A can of sweetened condensed milk.

1/2 cup of water

1/2 cup of full cream powdered milk.

(Optional 1/2 cup of choc chips and milo to suit)

 

Heat all ingredients (except choc chips and milo) gently,

and stir until combined.

Let cool to boat temperature.

 

blend all ingredients until fluffy..

put in freezer until slushy ....blend again..

Repeat until thickish and ice crysticals have disappeared. Stir in optional choc chips.

Freeze until solid..

Makes aprox 2 litres

 

Eat sprinkled with milo !!!

 

 

 

On "Jannali"it takes three days to fully freeze. We have a fiberglass camping chest fridge as our main fridge. The time delay is not a problem because if you really need to have it in large quantities just stagger several batches. These three recipes are dangerously yummy....and eating a very large bowl whilst hanging on the pick off a tropical island is one of lifes great pleasures !!

Fry bananas in butter. When starting to get hot, pour in rum. Light rum. (looks impressive but doesn't seem to have much heat)

Cook until on verge of burning. Serve hot. Would be great with icecream but we don't have a freezer.

if you can slip just a little rum

 

into either of the above recipes

 

you remove the entire unlucky banana residue

 

if you use a lot of spiced rhum

 

is actually makes them lucky again :thumbup:
